Description
Ascorbic Acid is a water-soluble vitamin C ingredient for formulations designed specifically around its acidic character and sensitivity. It is not a drop-in addition: oxygen, light, heat, trace metals, pH and packaging can all influence how quickly it oxidises.
Instability may appear as colour change, loss of activity or changes elsewhere in the formula. A successful product therefore depends on the complete system—process, supporting ingredients, headspace, container and expected storage conditions—not on the raw material alone.
Minimise avoidable exposure during manufacture and test the finished system over time. Verify the appropriate concentration, pH, process and claims against the specification for the supplied grade and the requirements of the intended market.
